Baby Back Ribs
| Baby back ribs are very popular in the summertime for barbecuing. There are even contested for this great cut. People will taste test the ribs & sauces, however the best recipe are unless without a great rib to start with. Ribs are one of the most expensive cuts of meat, even though there is little meat on them. With only two (sides) of ribs to a hog and a great demand of them, this drives the price up. The Baby Back Rib come from the side part of the pork rib cage. We at Heritage do cut some of our own ribs too. We leave a generous amount of meat on our ribs. We do our best to keep the price in check too. The Heritage meat market chart below shows how we do cut our ribs. |

We start with a nice center cut loin. This is a great cut of pork. |

With a knife we cut a long the rib bones, but not to close to the bones as we want to leave some nice meat on the rib. |

As we continue to cut away the bone the two piece will separate. We will saw off the bone area shown here too. |
